研究テーマ

 栄養素を中心とした食品成分の健康増進/疾病予防作用を研究しています。特に、消化管における食品成分間の相互作用に力を入れており、例えば、食物繊維やオリゴ糖によるフラボノイド類やミネラル類の吸収促進作用は、これら食品中微量成分の機能性発揮に重要な意味を持つと考えています。

自己紹介

 学生以来、ずっと基礎栄養学分野で学び、研究してきました。この分野は、まだまだ未知の部分が沢山ありとても魅力的です。栄養素をはじめとする食品成分の生理作用を基礎から学び、氾濫する食情報を正しく理解する力を身につけるために学びましょう。

講義?演習

分子栄養学

栄養素の役割や病態との関連を、分子や細胞のレベルで学びます。体全体の代謝を見据えつつ、体内で起こっている分子の世界を学びます。

生化学A?B

人体の成り立ち、および食物を摂取した際の体の反応、さらには生体の恒常性やその破綻による慢性代謝病を理解する上での基本となる、生体成分の構造と栄養素の代謝を学びます。

栄養生化学実験

生体内で起きている複雑な代謝経路や調節機構を理解するため、様々な実験を行います。そして、摂取した食事による栄養状態の変化が、身体指標がどのように影響するのかを学びます。
